Cucumber Relish – อาจาด


1/2 cup  White vinegar

1/4 cup  Water

1/2  tsp  salt

1 cup  Granulated sugar

4 tbsp  Shallot slice thin 2 mm. estimated

2 cucumber small (or one large) peeled and cut thin about 2 mm. estimated

1 Red Chili/pepper seed out and fine chopped (option)

a spring of cilantro/coriander to garnish


1. Combine the vinegar, water, sugar and salt in a sauce pan. Bring to a boil. (Boiling for 1-2 minutes if too long the color of syrup will became darker)

Then remove from the stove and leave to cool. …(springkle with fine chopped chili is option)

2. Add syrup to cucumber and shallot just before serve.  Add sprig of coriander for a charming garnish.
