Fast Thai Dish – Fried rice vermicelli

Fried rice vermicelli with kale, prawns and eggs  – Sen Mee Pad See Ew {เส้นหมี่ผัดซีอิ๊วกุ้ง}

A quick and convenient Thai dish {a Chinese influenced}. It has only a few ingredients and takes only a few minutes to cook. General use wide noodles or Rice vermicelli also popular to use in Thailand.

Ingredients (Making 1 portion)
90-100 grams  (This weight is before soak in water) Rice vermicelli brand Wai Wai is the most popular not only in Thailand but overseas, soak in normal-cold water a few minutes until soft, drain and set aside
4-5 prawns or your favorite meat, meat to slice into bite size
35-40 grams  Kale, wash and cut in bite size
2 eggs
1 garlic cloves, fine chopped
1/4 – 1/2 Tsp Dark sweet soy sauce
1/2 Tsp light soy sauce or Tamari soy sauce
1/4 – 1/2 Tsp Granulated sugar
2-3 Tbsp Cooking oil

Preparation
1. Prepare all ingredients on the tables. Heat a pan to medium high heat (always use high heat is a key, add 2 Tbsp of cooking oil, Add garlic and fry garlic until fragrant and light brown, add meat to cook, beat two eggs separated from the meat and leave eggs to set then stir the eggs a few times and push to aside of the pan.

2. Add rice vermicelli and kale then add dark sweet soy sauce to noodles, sprinkle with sugar, light soy sauce. Very quick stir all ingredients together at this point the bottom of pan may be dry that you can add 1 more tablespoon of cooking oil, adjust the heat if too high that will burn the bottom of pan (but we like the bottom to get dry and vermicelli brown that stick at the bottom) when kale is cooked is done.


3. Transfer to a serving plate. Serve with condiments; lime wedge, granulated sugar, fish sauce and crushed dried chili.
