Banana Fritters with sesame seeds and vanilla ice cream

I must say better delayed than never. Today our presentation is a dessert. This dessert is one of my favorites. Banana fritters,  with sesame seeds served with vanilla ice cream. This goes along perfectly with Thai cuisine. There are many  banana fritters recipes from all over the world; this classic recipe is one I like and is one of chef Gordon Ramsay’s. (Hot..Crispy..delicious to eat and a great indulgence).  I have adapted his recipe a little by replacing from five spice powder to vanilla extract. Tradition Thai banana fritters would prepare with more ingredients such as added grated coconut meat, and or  clear lime stone water solution…)

This recipe use rice flour with corn flour for batter , it is not heavy, but thin coated and crunchy and be a good companion when served with a scoop of vanilla ice cream (or coconut ice cream) it is lovely.

Ingredients (serve 2-4)

50 grams Rice flour

50 grams Corn flour

2 tbsp  White sesame seeds

a pinch of sea salt

1 Tbsp Granulated sugar

125 ml (half cup) Room temperature – cold Water

a few drop of Vanilla extract or 1 tsp vanilla powder

2-4 Ripe bananas, one bananas per one portion is just perfect

vegetable oil for deep-frying, I use canola oil

Good quality of vanilla bean ice cream

Garnish and decoration: chocolate sauce, whipped cream, mint, icing sugar to dust

Chocolate sauce (adapted recipe from taste.com.au)

1/4 cup Dark chocolate or bittersweet chocolate, fine chopped

1/4 cup good quality cocoa powder or dutch cocoa

1/4 cup fresh cream

1/4 cup full cream milk

2 tbsp butter

Preparation

1. Prepare the batter, Combine rice flour, corn flour, salt and sugar in a mixing bowl and stir well. Make a well in the center of dry ingredients and pour in the water. Stir until the mixture is blend and there are no lumps in the batter.  Add sesame seeds and vanilla extract (or vanilla powder), stir all together. Chill in the refrigerator while prepare for chocolate sauce.

2. Prepare chocolate sauce..Warm cream and milk until simmer, then remove from heat, add chocolate, cocoa and butter and leave 1-2 minutes before whisk until smooth. Set aside.

3. Heat vegetable oil for deep fry banana use medium-high heat. Test the oil is hot by drop of  batter it should sizzle immediately.  Cut each banana into 5-7 piece, Dip the bananas pieces in the batter to coat all over before carefully drop in to hot oil. Fry for a few minutes until light – medium golden brown, transfer cook banana to paper towel.

4. Because banana fritters will serve hot so make sure everything is ready to be on a serving plate. Top banana with a scoop of vanilla bean ice cream and garnish with mint, chocolate sauce.

  1. This is simply awesome and brings back memories of my mom making this as an inexpensive treat for us in the evenings on rainy days. Only problem was we couldn’t afford the ice-cream. I’m going to make it the next time my kids and grandkid come over – with the ice-cream.

      Nice to meet you here and thank you for your kind comment. I guess your mom is a great cook. This dessert I made once in a while for a treat.Do you know that every time I am cooking for my post such make a coconut cream then I think of a childhood but I use a small rabbit seat to grate coconut, the smell of kaffir lime leaves touched my nose with the memories of the kaffir lime tree at home and so on…etc All the memories and pictures came back to me it was a good memories.
